Building

Derek is in the final stages of demolition and clean up inside the building. He has focused on the Virginia St. side, where the manufacturing space will be located. He is currently using a jackhammer to break up the ramp leading to the loading dock. After, he’ll take out that loading dock and will move the door down to street grade. This will be the main entrance for receiving supplies and sending out spirits.

Business / Community

Signage is coming along! With Lindsay Jaeger’s designs, we’ve been working with local Ben Keneally from Lights in the Night Neon to help translate to dimensions, materials, and production for tasteful signs on each face of the building.

This month, we submitted our federal permitting paperwork for the Alcohol and Tobacco Tax and Trade Bureau (TTB) to be a Distilled Spirits Plant (DSP). To find out more what this entails, take a look at: https://www.ttb.gov/business-central/requirements-beverage-distilled-spirits-plant. According to ‘Processing Times for Original Permit Applications’ we might have anywhere from 45-82 calendar days to wait.

Distillery

Derek and Callie had a short but action packed trip to Virginia to visit a distillery that uses equipment from our still manufacturer. Davis Valley Distillery operates on a much larger scale than we ever will, but seeing them in action was incredibly useful, especially getting tips and tricks from someone with over 25 years experience. Thanks to Rusty, for all his advice, connections, and general help.
