Building

After months of talking about demo, Derek might be done! He’s cleared the dust and debris from ten 15’x15’ squares on the Virginia St. side. In later phases, he’ll clear the rest of the building, but this should get us started for the manufacturing space and front of house.

See our photo for a rendering of our future downtown-facing sign. It’s going to look pretty great up there when we install it in a couple of months.

Business / Community

This month, we submitted our state of Montana licensing paperwork for a Domestic Distillery License. To find out more what this entails, take a look at the Department of Revenue’s Alcohol Beverage Control Division’s guidance in  https://mtrevenue.gov/publications/domestic-distillery-license-form-mdla/ and https://mtrevenue.gov/wp-content/uploads/dlm_uploads/2024/04/Domestic-Distillery-License-Booklet-2024-Final.pdf

As construction progresses, we’re also collecting various items we’ll need to outfit the distillery: this month we picked up pallet racking, sinks, and a kegerator for ginger beer.

Distillery

In recent news, some of you may have heard that a federal judge in Texas ruled that the 1868 ban on home distilling is unconstitutional (unlicensed production of distilled spirits is currently a federal felony, punishable by up to five years in prison, a $10,000 fine, or both). If the government appeals it, we hope this ruling is upheld so that more people might view home distilling the same as home brewing.

With summer berries everywhere, Katrina has been working on shrub recipes, including strawberry, mixed berry, chokecherry, kiwi gooseberry, and plum ginger. She’s using the last of her rhubarb shrub to make mocktails with sliced strawberries, bruised mint, and topped with sparkling water (though in the evening, she’ll often add a splash of vodka). Derek currently likes the kiwi gooseberry shrub with white rum and a dash of cardamom spirits.

Speaking of drinks, we have two slushie machines heading our way from Grand Rapids, MI. We’ll craft delicious alcoholic slushies (think blackberry / lemon / vodka) and non-alcoholic slushies (think blackberry / lemon). In Wyoming, they call them sloshies, in New Orleans they have a whole slew of frozen cocktails. Here in Dillon, we’ll just be happy to have cold drinks on these hot days.
