Building

As part of the construction process, we will connect the building to all utilities. We’ll run water in from the city main and trench out to the sewer. Until electrical is sized and connected (all of the lines were cut at some point in the past), Derek will use a generator for power. We’ll run natural gas for the boiler room (which will heat the still and mash tun). We look forward to the day when everything is installed and working.  

Business / Community

This month, we heard back from both the TTB (who will issue our federal permit for a distilled spirits plant) AND the State of Montana (who will issue our domestic distillery license). Both wanted minimal paperwork supplements, meaning we’re incredibly close to fulfilling their requirements. After that, our final sign offs will be local: building, health, and fire inspections. We have a lot of construction yet to finish, but it feels good to know we’re getting closer.

We had a great time at the Dillon Farmer’s Market today, kicking off Labor Day Weekend. Our ginger beer was a hit, and we were excited to pour into our new Terminus Yowlers (reusable 16oz glasses with beer growler caps). For those of you who purchased them, we’ll treat them just like brewery growlers – now that you have the glassware, you only pay for refills. When we open, we’ll use the yowlers to send customers home with ginger beer, shrubs, Bloody Mary mix, eggnog, and other delicious drinks.

Distillery

This month we have been narrowing down the bottle style for our spirits. Liquor is sold in milliliters - standard bottle size is 750ml. We’re looking for something with a classic silhouette: straight sides, a curved shoulder, and easy to pour from. Our bottle distributor just sent samples of three designs and we’re close to choosing.

Our slushie machines arrived! They will help us serve up alcoholic and non-alcoholic slushies when we open our walk-up window. Because the machines can also dispense cold drinks, we might use them to pour our house made Bloody Mary mix on Fridays and Saturdays.
